1 cup light brown sugar (I always use dark)
7 sliced of pineapple
1/2 cup pineapple juice
7 candied cherries
10-12 pecan halves
1/4 cup raisins
3 eggs
1 1/2 cups sugar
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1.) Preheat oven to 350
2.) Melt butter in 10 inch skillet over low heat, sprinkle brown sugar and allow to melt
3.) Arrange the pineapple rings in the skillet, cut a few in half if needed, put cherries in the center, and nuts and raisins to accent
4.) In mixing bowl beat eggs, add sugar, vanilla and pineapple juice and blend well
5.) Combine dry ingredients then add to egg and sugar mixture.
6.) Pour batter over pineapple rings, bake for 45 min.
7.) Invert to have this :)
